Bread does not go stale because it dries out. It goes stale because its structure changes. As bread cools, its starches reorganize and harden, pushing water out and creating that firm, dry texture. That is why bread can feel stale even when it still contains moisture.
The good news is that this process can be temporarily reversed. Lightly mist the bread with water or wrap it in a damp paper towel, then apply heat in the microwave for 10 to 20 seconds or in a warm oven for a few minutes. The heat softens the starch structure and allows it to reabsorb moisture, restoring a fresh texture. The catch is that this is borrowed time. As the bread cools, it will firm up again, often faster than before, so it is best enjoyed immediately.
