Sourdough is a bread that uses natural leavening as opposed to commercially made/synthetic yeast which may be attributable to the continuing spike in celiac disease, gluten intolerance, acid-reflux disease, diabetes, and wheat allergies. The magic of sourdough bread is that it is a great alternative to conventional bread. It’s richer in nutrients (which means low glycemic impact so less likely to spike your blood sugar); is easier to digest and the use of natural yeast slows digestion so people can feel fuller and eat less. In addition, it has a more complex flavor and can keep longer. Remember, though, that not all store-bought sourdough breads are made using the traditional sourdough method, and this can reduce their health benefits.
