Complexity Simplified

Yikes! I'm out of bread!  Here you go...

1 ½ cups of self-rising flour *
3/4 cup Greek yogurt
2 TBL of oil + more for griddle

Combine all ingredients.  Knead until smooth & not sticky.  Divide into 8 balls (or whatever size you want).  Roll out/flatten each ball to about ¼” thickness.  Heat griddle pan over medium heat.  Brush surface with oil.  (I’m extra lazy, so I use a nonstick oil spray.)  Add dough and cook until brown—about 3-4 minutes on each side.  Voila!  Bread!  Serve warm with butter or olive oil.  You can also make variations like adding herbs or other flavors in the combining phase.  Now is the time to experiment!
