Valentine’s Day is this week. Chocolate reflects the terroir (all the factors that give an ingredient from a particular place a particular flavor) where it’s grown. For example, chocolate expert, Kim Hack, writes chocolate from Madagascar often has citrusy notes; from Venezuela, it may taste of red fruit; Belize of fudge; and Ecuador of slightly floral flavors. Many small farmers grow organic cocoa but can’t afford the certification required to use that term on food labels. Chocolate is derived from the seeds of the cacao tree, also called cocoa beans. Eating dark chocolate with high cocoa content can deliver antioxidants and minerals and may protect you from heart disease. However, as with everything, eat in moderation because chocolate can be high in sugar and calories.
